Saturday April 142001 OBITUARIES TheTelegraph UGA horticulturists develop a non sweet sweet potato By Elliott Minor Hie Associated Press ALBANY Elmo Brown builds a fire in a rusty barrel on cold days He ducks under a blue canopy on rainy days He found a way to escape the spring heat so he just tolerates it Brown 83 has been peddling sweet potatoes on the same Albany street comer for 55 years and he's been eating them all his life like to bake them fry them stew them and brown and roast he said customers keep com ing back to savor their sweetness But scientists are trying to reduce that sweetness to get even more people to develop a taste for the vitamin rich vegetable University of Georgia horticul turists Stanley Kays and Wayne McLaurin hope their work will lead to designer sweet potatoes with varying degrees of sweetness or no sweetness at all great for an occasional vegetable but if going to eat them everyday you want some thing not Kays said you imagine making up 90 percent of your caloric diet with Hershey The two liave already created a non sweet sweet potato that tastes like an Irish potato They believe it could boost consumption provide a nutritious diet for developing countries and lead to a melange of new products such as sweet potato french fries not frying to get rid of what got just complement Kays said Brown said stick to his sweet sweet potatoes not going to fool with he said my customers would Sweet potatoes are more nutri tious than white potatoes They are packed with vitamins and miner als and low in fat and calories They grow well in warmer cli mates making them an ideal food for the tropics They were a staple of impover ished Southerners during the 1920s and they still are the seventh leading food crop But US per capita consumption has Tbe Associated Press "Ylf i 1 J' 1 7 Elmo Brown 83 arranges sweet potatoes that he sells at his roadside stand in Albany on riday dropixd from 29 pounds during the 1920s to a low of 39 pounds in the 1990s Per capita consumption of white potatoes which account for 31 per cent of all vegetables consumed in the United States has increased to 140 pounds largely because of the increased demand for potato chips and french fries White potatoes used in 10000 types of processed foods have become a $27 billion crop while the value of the US sweet potato crop has shrunk to $219 million North Carolina and Louisiana lead the nation in production but sweet potatoes are grown in 25 to 30 other states Kays and McLaurin said their discovery was sheer luck It hap pened while they were combining features of some of the less sweet types came up with thousands of Kays said picked this one out because used to Idaho baked potatoes It had the fla vor and textural qualities that Americans could relate Their unsweet potato is not available to farmers or consumers Instead they are releasing the plants to breeders who can incor porate its qualities into new variet ies They plan to send some to North Korea which is gripped by famine and has lost much of its white potato crop over the past four years Meanwhile they are trying to develop a scientific method for analyzing sweet potato flavors They believe this will help create a range of sweet potatoes for particular tastes goal is not to come up with new varieties but to identify the flavor types that people want in the United States and around the Kays said ATTENTION CANCER SURVIVORS Dear Cancer Survivor The American Cancer Relay or Life and hundreds of your neighbors would like to honor your victoiy in the fight against cancer Please join fellow survivors from your community at Relay or Life Survivors like yourself will lead the opening ceremonies in a Celebration of Life!
