It literally takes 2 minutes to assemble and cooks up all on its own in the slow cooker. No need to even bother dishing it out. Serve it straight from the slow cooker so it stays nice and warm. Double the recipe if you’re feeding a crowd, because people are going to dip anything and everything into this little number.
Dips are always welcome at gatherings. They’re like the water cooler of superbowl parties. Everyone loves to crowd around, dip, dunk, and just make conversation. They’re usually pretty easy to make and you can serve them up with all sorts of fun vehicles to consume them with, like, pita chips, tortillas, crackers, pretzels, and veggies (if you get there late, veggie sticks is all your getting).
You see the regulars all the time like spinach and artichoke, hummus, salsa, and gaucamole. You’ve also had queso and sriracha together way too many times. But sometimes you just need a little change. A little more flavor and something a little less complicated.
What I love most about this dip is that 1.) the flavor is so phenomenal. 2.) its bold. 3.) it’s tossing a bunch of ingredients in and stirring a few times to make sure it all melts together. 4.) getting compliments up the wazoo for being the person that brought this slow cooker queso dip.
When I was making this dip to picture it for LSJ, I asked Siri to set a timer for me on my phone for 2.5 hours.She said ‘I can see you shivering with antici-pation’. <– just one of the many times Siri has won. I indeed was shivering with anticipation because I was looking forward to consuming this dip by the bucketful!
I made this seriously addicting queso and it was gone by the next day. Mind you, this dip makes enough to comfortably serve 8-10 people. A friend of mine came over and I served this queso alongside some tortilla chips. She LOVED it. I packed some for her to take home for her and her hubby (who happened to be out of town), and she had to refrain herself from eating the container cleaner. It’s that good.
There’s cheese. and garlic. and more cheese. and salsa verde. <— sounds like an ideal situation to me.
Creamy, thick, and full of flavor. It’s not the kind of dip that slips off your chip either. It holds on for that ride all the way up to your mouth.
I had the hardest time coming up with names for this little dip. I mean yeah it’s queso. Yes it’s a dip. I made it in the slow cooker. But I was trying to brainstorm ideas with a friend and we kept coming up with ridiculous names like ‘creamy salsa verde’ <– that sounds disgusting! I think another one was milky, cheesy garlic salsa verde dip <– um… what? That’s a no.
Whatever name you give this creamy slow cooker queso dip, it’s gonna be a hit.. again and again!

Ingredients
- 8 ounces cream cheese, diced
- 1 (16 ounce) jar salsa verde (homemade
- 1/2 cup sour cream
- 4-5 cloves garlic, minced
- 1 cup cheddar jack cheese (monterey jack or pepper jack is fine too)
- salt + pepper to taste
Instructions
- Add cream cheese, salsa verde, sour cream, garlic, and cheddar jack cheese into the slow cooker. Allow the dip to cook on the low setting for 2.5 hours, stirring every 30-45 minutes. Use a small whisk to help remove any lumps. Serve warm with pretzels, tortillas, veggie chips, veggie sticks, and pita chips.
Notes
I typically serve this queso straight from the crockpot. Just turn the setting to 'low' or 'warm' to keep it going. Stir every 30-45 minutes.
